Uncle Toby is the owner of Say Uncle Utilities, and tried to take over MomCorp with Dad. Uncle Toby was revealed to be a Mutant, and Leela (posing as Mom) used it as blackmail to stop him and Dad from taking over the company, they then became janitors.
